Hens raised for eggs are denied nearly everything that comes naturally to them. Many are crammed together into wire battery cages and can never fully spread their wings, walk, perch, or build nests. Because of this cruelty, as well as for health reasons, more people than ever are ditching eggs in favor of healthful plant-based alternatives.

Fortunately, giving up eggs is easy, once you know how to replace them! There are tons of delicious egg-inspired vegan breakfast recipes, and many of them revolve around a few key ingredients:

• Tofu

Unsurprisingly, when it comes to breakfast, tofu is a popular egg replacement—often in the beloved tofu scramble, a timeless vegan staple that is loaded with flavor. Tofu is also great for making a savory “egg” patty or a yummy vegan quiche!

• The VeganEgg

This revolutionary product, made by the fine folks at Follow Your Heart, is startlingly similar to eggs and makes a drool-worthy scramble. Many tasty recipes are specifically designed for the VeganEgg. If you can’t find it locally, you can order it online.

• Black Salt

Both chickpea flour and tofu are great egg replacements but, like so many foods, the right spices and seasonings are crucial. One essential seasoning that gives dishes an eggy flavor is black salt, an ingredient that most people don’t have on hand. But fear not—you can get it at your local Indian grocer or just buy it online!

• Chickpea Flour

Omelets, frittatas, and more are possible with just a little chickpea flour. Yep, this versatile legume can really do it all. And while you might have a somewhat harder time finding chickpea flour (also known as besan at Indian and Asian grocers), the hunt is worthwhile if you’re not into tofu.
