These Vegan Recipes Are So Tasty You Can Finally Give Up Eggs for Good
Eggs are one of the cruelest foods on the planet. As countless MFA investigations have documented, many hens are left to suffer from open wounds, serious untreated injuries, and infections without proper veterinary care.
Fortunately, we can take a stand for birds suffering at factory farms by leaving eggs off our plates! And there are TONS of amazing plant-based recipes that have all of the taste and none of the torture inherent in egg-based recipes. Here are a few of our favorites:
Vegan Quiche
Ingredients:
2 tbsp. oil
2–3 cloves garlic
1 shallot bulb, roughly chopped
2 Field Roast sausages, crumbled
4 handfuls spinach
1/2 cup cashews
1 package firm tofu
1/2 cup nutritional yeast
1/2 tsp. black salt
1/2 tsp. turmeric
1/2 cup vegan cheese shreds
Pepper to taste
Directions:
Sauté shallots and garlic in oil until fragrant. Add sausage and spinach. Cook until spinach is wilted.
In a blender, pulse cashews until no large chunks remain. Then add tofu, nutritional yeast, salt, turmeric, cheese, and pepper. Blend until smooth. Pour into a large bowl and combine with spinach mixture.
Pour into a premade vegan pie crust and bake at 350 for 40 minutes. (See full recipe video here!)
Mexican Tofu Scramble
Ingredients:
1–2 tsp. canola oil
1 tbsp. turmeric powder
1/2 cup onions, diced
1 package tofu (we used extra-firm silken)
1/2 tomato, diced
1 tbsp. cumin powder
1 tbsp. garlic powder
1/2 tsp. salt
Cilantro to taste
Pico de gallo, refried beans, and tortillas for serving
Directions:
Pour oil in hot skillet. Sauté turmeric and onions until onions are translucent.
Add tofu and smash it with a fork until no large lumps remain. Add tomatoes, spices, and cilantro. Cook until the tofu liquid has evaporated.
Serve on tortillas with refried beans and pico de gallo.
Breakfast Sandwiches, Three Ways
Ingredients:
Extra-firm tofu, sliced into 1-inch patties
1/3 cup nutritional yeast
1 tbsp. oil
1/2 cup water
1/2 tsp. turmeric
1/2 tsp. black salt
Salt and pepper to taste
Directions:
Make tofu “egg” marinade by whisking together all ingredients except tofu.
Add tofu to shallow dish and marinate for at least 20 minutes.
Pan fry until crispy on each side and serve with your favorite sandwich ingredients! (See the full video for inspiration!)
