This month, plant-based company JUST acquired a 30,000-square-foot production facility in Appleton, Minnesota. With the new facility, situated on 40 acres of land, JUST will be the largest private employer in the city!

The company seeks to lower the cost of its famed vegan JUST Egg to be more competitive with eggs from chickens. Co-founder and CEO Josh Tetrick says JUST Egg costs around 20 cents per egg equivalent. With the company’s expansion, he hopes to bring the cost down to just 4.7 cents per egg equivalent in the next two years! Made with mung beans, the delicious and high-protein JUST Egg is currently available in restaurants and stores across the country, including Veggie Grill and Walmart.

Tetrick stated:

To make our mission happen, we need to scale. Separating the protein from the bean requires talent, proprietary processing, and a supportive community. We found all that and more in Appleton.

The multistory facility is a perfect fit, operated for more than 30 years by ingredient company Del Dee Foods, which processed whey. Del Dee production manager and co-owner John Droogsma said in a joint statement:

Having JUST acquire our facility is a win-win for everyone, including the city of Appleton. In one year, we have doubled our staff and JUST has plans to continue that trend. That is great news for our town.

JUST isn’t the only plant-based company expanding to meet the demands of a changing market. According to a new report by research company Morning Consult, Impossible Foods is the fourth fastest-growing brand in the United States!
