Combining nutritious quinoa and black beans with juicy mango, red onion, cilantro, and creamy avocado, this recipe is gluten-free, completely plant-based, and packed with flavor!

Quinoa, Black Bean, Mango, and Avocado Tropical Salad

Ingredients:

1½ cups quinoa, cooked
1½ cups black beans, cooked
1 medium mango, cubed
1 Hass avocado, cubed
½ small red onion, finely chopped
2 tablespoons cilantro, chopped
Juice of 1 lemon
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper

Preparation:

In a large bowl, add the quinoa, beans, mango, onion, cilantro, lemon juice, oil, salt, and pepper and mix well. Add the avocado last and stir gently until all the ingredients are thoroughly mixed. Cover and chill for 30 to 45 minutes before serving.
